CVS Coupon Haul Weekend of 9/26/14


This was my biggest and best coupon haul to date. In order to keep my out of pocket low I split this purchase up into three different transactions. Couponing is very addictive but I never buy things Joe and I won't use. The items I have in my house now are getting on the larger side especially with toothpaste which seems to be free every weekend. So I have been looking into places to donate the extra items I receive from couponing that we don't need. There no reason not to pick up a free item if I can donate it to someone in need. I also love that I am ahead of the game and stocking up on Halloween candy!

101 Things in 1001 Days: #26 - Add 50 New Amazing Recipes to My Recipe Book

(Please excuse the missing chicken - I couldn't grab the camera before Joe dug in)

Garlic-Herb Chicken Thighs


Ingredients

1/3 cup olive oil
1 lb brussels sprouts
1/2 lb carrots
Pink of sea salt and pepper
4 lbs chicken thighs - bone-in and skin-on
3 cloves garlic
2 tablespoons chopped parsley
1 tablespoon chopped sage
1 1/2 teaspoons sea salt

Directions 
  1. Preheat oven to 375 degrees. Toss vegetables with a tablespoon of olive oil and sprinkle with a pinch of sea salt and pepper. Spread vegetables on a rimmed baking sheet.
  2.  Trim any excess fat off of the chicken.
  3. In a small bowl, combine the remaining olive oil, garlic, parsley, sage, and salt. Rub the mixture all over the chicken.
  4. Place the chicken skin side up on top of the vegetables and roast for 25 to 30 minutes. Until the juices run clear. Turn the oven to broil and brown the skin for 2 minutes before serving.

101 Things in 1001 Days: #26 - Add 50 New Amazing Recipes to My Recipe Book

  Roasted Tomato & Shrimp Pasta (Spaghetti Squash)


Ingredients

1 (3lb) spaghetti squash
3 tablespoons extra virgin olive oil
1 teaspoons sea salt
1/4 teaspoons black pepper
2 1/2 lbs Roma tomatoes, quartered
4 cloves garlic
2 lbs shrimp, peeled, deveined, ad tails removed
1/2 cup chopped fresh parsley
Juice of a lemon

Directions
  1. Preheat oven to 375 degrees
  2. Cut squash in half lengthwise, scoop out and discard seeds
  3.  Place halves cut side down on a baking sheet
  4. Place tomatoes in a 9 X 12 baking dish and drizzle with olive oil
  5. Add garlic, salt, pepper, toss to combine
  6. Place both the squash and tomato mixture in the oven with the tomatoes on the higher rack
  7. Roast for 30 to 35 minutes, stirring the tomatoes once halfway through
  8. Pull squash out and set aside to cool
  9. Add shrimp, parsley, and lemon juice to the tomato dish and stir
  10. Return the tomato dish to the oven and continue to roast for 20 minutes, until the shrimp are pink and cooked through
  11. Use a fork to loosen the strings of noodles from the squash and transfer into a serving bowl
  12. Top with the shrimp and tomato sauce and serve

With being a new couponer I keep running into the same problem. The items that are running low in our house are never the items that are on sale or that I have coupons for. One of the main rules in couponing is that you never buy what you need but rather buy whats on sale that you will use and build stock in your house. This week I lucked out and found deals for both body-wash and hand-soap. We desperately needed these items and I was holding out to see what the weekend sales were going to be. Our 3rd Wedding Anniversary!

Rewind three years, Joe and I were living in California getting ready for our big day, little did we know what was in store for us. During that time we had every intention on continuing with his current career, buying a house in the near future, and of course filling all the rooms with babies.


Three years later we are celebrating our 3rd wedding anniversary by commuting to Manhattan for work and continuing onto night school in the evening. Although we will not be celebrating the traditional way this year we have decided to make it up next year. 


I would have never thought before our 1st wedding anniversary we would have moved across country and changed just about everything we have planned for our future but I could not be happier with the decisions we made as a couple. Our future still holds babies and a house but for right now we are enjoying being married and working towards a better future.

It's still unreal that we have been married 3 years already!

Weekend Wrap-Up (8/29-9/1)

Joe and I packed up the truck on Friday night and headed out of town to go camping in the Catskill Mountains. I have not been camping in years so needless to say Joe and I were both very excited. The weather was not perfect the entire time but we did get one full beautiful day. I know I have been saying this a lot but it was so nice to get away!








It was defiantly a challenge to drag myself into the office this morning.
