Apple-Cinnamon Pork Loin

Ingredients

2 lb. boneless pork loin roast;
3 medium apples, peeled and sliced;
1/4 cup honey; (optional)
1 red onion, halved and sliced;
1 tbsp. ground cinnamon;
1 cup chicken stock;
Cooking fat;
Sea salt and freshly ground black pepper;

 
Directions
  1. Season the pork to taste with sea salt and freshly ground black pepper.
  2. Melt some cooking fat in a large skillet placed over a high heat and brown the roast on all sides.
  3. Using a sharp knife, cut 3-inch deep slits into the pork.
  4. Insert the apple slices into each pork slit.
  5. Place half of the remaining apples in the bottom of a slow cooker.
  6. Place the roast over the apples.
  7. Drizzle the honey on top of the roast, then add the onion and remaining apples.
  8. Add the chicken stock and sprinkle everything with cinnamon.
  9. Cover and cook on low for 6-8 hours.

Sausage and Kale Pasta Casserole

Ingredients

1 lb. Italian sausage
1 medium spaghetti squash, halved and seeded
Extra virgin olive oil, for drizzling
1 large bunch of kale, de-stemmed, and chopped
1/2 red onion, sliced thin
1/3 cup chicken broth
1/2 cup coconut milk
1 clove garlic, minced
2 tsp Italian seasoning
Salt and freshly ground pepper, to taste

 
Directions
  1. Preheat the oven to 400 degrees F. Place the squash in the microwave for 3-4 minutes to soften. Using a sharp knife, cut the squash in half lengthwise. Scoop out the seeds and discard. Place the halves, with the cut side up, on a rimmed baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for 45-50 minutes, until you can poke the squash easily with a fork. Let it cool until you can handle it safely. Then scrape the insides with a fork to shred the squash into strands.
  2. Meanwhile, melt the coconut oil in a large oven-safe skillet over medium heat. Add the sausage and brown. Once cooked through, remove to a plate. In the same skillet, add the onion and sauté for 3-4 minutes. Next add the garlic, Italian seasoning, and kale and cook for 2-3 minutes to slightly wilt the kale. Pour in the chicken broth and coconut milk and simmer for an additional 2-3 minutes. Remove from heat.
  3. Stir in the cooked sausage. Add the spaghetti squash into the skillet and stir well to combine. Bake for 15-18 minutes, until the top has slightly browned. Serve hot.

Baked Mustard Lime Chicken

Ingredients

1 pound chicken thighs
1/2 cup fresh lime juice
1/2 cup fresh cilantro, chopped
1/4 cup dijon mustard
1 tablespoon olive oil
1 tablespoon chili powder
1/2 teaspoon celtic sea salt
1/2 teaspoon pepper

 
Directions
  1. Combine lime juice, cilantro, mustard, olive oil, chili, salt and pepper in a food processor
  2. Pulse until ingredients are well combined
  3. Rinse chicken breasts, pat dry and place in a 7 x 11 inch baking dish
  4. Pour marinade over chicken, cover and refrigerate for at least 15 minutes or up to 6 hours
  5. Bake at 350° for 60 minutes uncovered, or until an instant read thermometer reads 165°
  6. Serve with extra sauce spooned over top

Beef Pot Roast

Ingredients

2 teaspoons coconut oil
4 pounds boneless chuck roast
1 onion, chopped
2 cloves garlic, minced
2 bay leaves
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
 
Directions
  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Heat a heavy Dutch oven on top of the stove over medium high heat. Add oil, and sear meat in the center of the pan for 4 minutes. Turn meat over with tongs; sear all sides for 3 to 4 minutes on each side. Remove meat from pan. Arrange onion, garlic, and 1 bay leaf in the bottom of the pan, and sprinkle with salt and pepper. Return meat to pan, place remaining bay leaf on top of meat, and cover.
  3. Cook in the oven for 30 minutes at 325 degrees F (165 degrees C). Reduce the heat to 300 degrees F (150 degrees C), and cook for 1 1/2 hours. Remove roast to a platter to rest for 10 to 15 minutes. Slice, and top with onions and gravy.

Breakfast Casserole With Sausage

Ingredients

8 eggs
1 lb. Italian sausage, casing removed
1 sweet potato, diced
½ medium onion, diced
1 bell pepper, diced
3 garlic cloves, minced
⅓ cup almond or coconut milk
Sea salt and freshly ground black pepper
Coconut oil

Directions 
  1. Preheat your oven to 375 F.
  2. Melt some cooking fat in a skillet placed over a medium-high heat. Add the sausages, and crumble while cooking.
  3. When the sausages are cooked, transfer them to a large bowl.
  4. Add the onion, garlic, and bell pepper to the same skillet, and cook for 4 to 5 minutes over a medium heat.
  5. Pour the vegetables into the bowl with the cooked sausages.
  6. Add the sweet potatoes to the skillet, season to taste, cover, and cook about 8 minutes.
  7. Mix the sweet potatoes into the bowl with the sausages and vegetables.
  8. Pour the sausage and sweet potato mixture in a baking dish.
  9. In a bowl, whisk together the eggs, almond milk, and season with salt and pepper to taste.
  10. Pour the egg mixture over the sausage mixture, and place in the oven.
  11. Bake for 20 minutes, serve warm.

Simple Sausage Casserole

Ingredients  

4 to 6 sausages
1 pint grape tomatoes
2 to 3 sweet potatoes
2 large bell peppers, chopped
1 large red onion, chopped
2 garlic cloves, minced
A few sprigs of fresh thyme
Sea salt and freshly ground black pepper

 
Directions 
  1. Preheat your oven to 400°F.
  2. Combine the grape tomatoes, sweet potatoes, bell peppers, red onion, and minced garlic in a large baking dish.
  3. Brown the sausages on all sides in a skillet placed over high heat, about 1 to 2 minutes per side.
  4. Place the sausages on top of the vegetables, toss in the thyme, and season everything to taste.
  5. Place in the oven and bake for 40 to 45 minutes.

Turkey Stir-Fry

Ingredients  

  1 Medium Onion
1 lb Ground Turkey
1 Box Frozen Spinach
1 Can (14oz) Can Diced Tomatoes
Salt
Pepper
2 Tsp Basil

Directions
  1. Heat a large skillet on medium-high heat with coconut oil. Toss your diced onion in the pan.
  2.  After the onion has softened for a few minutes, add your ground turkey. Let it cook until it's halfway done and then add your spinach, died tomatoes, salt and pepper, and basil.
  3. Let it finish cooking. Taste test and adjust seasoning if needed.

101 Things in 1001 Days: #26 - Add 50 New Amazing Recipes to My Recipe Book


As you can see I didn’t get to cook this recipe on the grill because we were having one of our regular summer storms here in New York. Instead of scratching the entire meal I decided to use our iron skillet and make it work. The shrimp came out just as tasty but strangely shrunk dramatically in size. I am excited to try this recipe again and see how different it comes out using our barbeque.

Grilled Shrimp Scampi

Ingredients  

1/4 cup olive oil
1/4 cup lemon juice
3 tablespoons chopped fresh parsley
1 tablespoon minced garlic
ground black pepper to taste
crushed red pepper flakes to taste (optional)
1 1/2 pounds medium shrimp, peeled and deveined

Directions
  1. In a large, non-reactive bowl, stir together the olive oil, lemon juice, parsley, garlic, and black pepper. Season with crushed red pepper, if desired. Add shrimp, and toss to coat. Marinate in the refrigerator for 30 minutes.
  2. Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard any remaining marinade.
  3. Lightly oil grill grate. Grill for 2 to 3 minutes per side, or until opaque
